Best Strategy
The Godskin Noble can be one of the more challenging bosses in the game, especially the one found in Volcano Manor. However, with a few tips and tricks, it actually becomes a very easy job, but beating the Godskin Noble does require some preparation.
The strategy we will be using is making use of status effects. First, get something that can cause sleep on the Godskin Noble. The safest option is crafting sleep pots, however firing St. Trina's Arrows is a great option as well, and failing that, St. Trina's Sword or Torch can get the job done as well, albeit with significantly more risk.
Once the Godskin Noble is asleep, you can very easily get close and apply the Poison status effect by using the Incantation Poison Mist, which only costs 12 Faith. This will not automatically wake the boss up, so you can safely apply this.
Then, once the Godskin Noble is poisoned, you can rinse and repeat, or get the job done faster by also applying Scarlet Rot. You can do this with either Rot Pots, Rotbone Arrows, or swift attacks from the Antspur Rapier. Once the Godskin Noble is infected with your damage over time status effects, you can put him back to sleep repeatedly while you sit back and wait for him to die.
If you want to speed things along, deal some quick damage with fast, Bleed or Frostbite-infused weapons for big bursts of damage. This isn't necessary though, as Sleep, Poison and Scarlet Rot are more than enough to deal with the Godskin Noble easily.

Thrust Combo: The Godskin Noble will raise his sword before delivering many, very fast thrusting attacks, ending with a particularly long-reaching one. Do not be in range when the Godskin Noble performs this attack, as it has good tracking and will kill you quickly.
Stomp: The Godskin Noble will stamp down twice, creating a small shockwave of damage at the point of impact. Don't be too close, but if you are, dodge back a few times when you see this coming.
Black Fireball: The Godskin Noble will summon flames in his hand before hurling them at the player, dealing high damage and damage over time. This is easy to avoid, and can even be punished if you are close enough by dodging forward and getting a hit in.
Shove: The Godskin Noble will thrust out his stomach with little to no warning. This does no damage, but does stagger you. In phase 2, he will do a stronger version of this that will do a little a damage, but not much.
Stab Slash Combo: The Godskin Noble will thrust with his sword with very little warning, followed by a swift swipe from one side to the other. Best to not be in range of this, but if you are, dodge backwards.
Stab Slap Combo: The Godskin Noble will perform a swift thrust with his Stitcher, followed by a swiping slap from his left hand. Try not to be in range of this, but if you are, dodge backwards.
Spin: In phase 2, the Godskin Noble will puff his body up before starting a prolonged rolling attack that deals very high damage. This is easy to avoid by standing behind one of the pillars in the room.
Slam: In phase 2, the Godskin Noble will puff his body up before rising into the air and, after a delay, he will slam down, creating a wide shockwave. When you see him beginning this attack, sprint backwards to avoid all damage.
Black Flame Pillars: The Godskin Noble will lower his hand and then raise it, encircling himself with pillars of black flame. These deal high damage and prevent melee attack for a time, but are easily avoided.
